America's Test Kitchen recommends clean, crisp, dry Sauvignon Blancs for white cooking wines. Do not buy wines labeled cooking wine at the grocery store. They are awful. Use whatever tomatoes you want for the raw tomatoes. This meal is supposed to feel thrown together. This probably makes enough for a dozen scrambled eggs, I cannot remember.

  • 1 bottle white wine
  • 2 28oz can crushed tomatoes
  • 3 tomatoes
  • 12 eggs

    Steps for Completion
  1. Slice the onion and shallots then saute with the oil.
  2. Reduce the whole bottle of wine into the onion mix.
  3. Add the crushed tomatoes and cook down the liquid.
  4. Add sliced raw tomatoes and cook until desired doneness.
  5. Add salt and pepper to taste.
  6. Make the eggs separately.
  7. Combine the tomato and eggs with whatever proportion you like.
